Wytsalucy felt somewhat distant from her traditional Navajo roots as a high school cheerleader and athlete, yet decided to explore agriculture and horticulture at Utah State University and found inspiration in the traditional Navajo peach.
Her research led her to visit Canyon de Chelly and Second and Third Mesas in Arizona, where they shared knowledge on traditional peach cultivation as well as oral histories. She collected seeds for genetic fingerprinting from these elders at Ksenija Gasic at Clemson University; results indicated that Navajo peaches differed significantly from modern varieties.
Light and crisp, this traditionally-crafted white balsamic is delicately flavored with the sweet sweetness of summer peaches for an irresistibly pleasant experience. Pairs well with our Blood Orange Olive Oil in salads or as an enticing drizzle on fruit. Also makes an outstanding vinaigrette when mixed with 2 tablespoons of vinegar and 4 tablespoons of olive oil then seasoned to taste with salt and pepper; making an irresistibly refreshing dressing when served over mixed greens or chopped salad.
